As part of its Learning Lab, Chicago Public Schools wished to purchase whole-muscle chicken for its students that was raised locally and with the judicious use of antibiotics. Through close collaboration with the Pew Campaign for Human Health and Industrial Farming (HHIF), a long-time champion of sustainable and judicious antibiotic use, School Food FOCUS developed purchasing guidelines and an RFP template [PDF], which can be adapted for use by any purchaser.
